This is a classic Chinese stir-fry with something for everyone – meat, veggies and fruit, in a delicious sweet and sour sauce.
Ingredients
Main:
1 lb pork – boneless loin chops
2 slices pineapple
1 bell pepper
½ large onion
½ cup carrots
½ T minced garlic
Marinade:
¼ t salt
1 T cooking wine
1 T soy sauce
1 egg yolk
1 T corn starch
Sauce:
1 T Worcestershire sauce
½ T lemon juice
4 T vinegar
4 T sugar
4 T water
4 T ketchup
½ t salt
1 T corn starch
Procedure:
1. Mix marinade ingredients in medium bowl.
2. Thin slice pork into bite size pieces and marinate for 30 minutes
3. Mix sauce ingredients in bowl and set aside
4. Slice pineapple, bell pepper, onion, and carrots into bite sized pieces
5. Precook carrot slices in water (1.5 minutes in microwave) and strain
6. Heat 3 cups cooking oil in wok to medium hot, 325 deg.
7. Remove pork strips from marinade and dust with corn starch (optional)
8. Cook pork in oil for about 2-3 min until just starting to brown (2 batches), remove with strainer and drain on paper towel
9. Dip out all but 2-3 T oil, reduce heat and fragrant garlic briefly
10. Increase heat to medium, add all veggies to wok, stir for 2-3 minutes
11. Pour sauce in around outer edge of wok, and stir to heat throughout
12. Add pork strips and stir until coated and heated throughout
